01 / ABOUT THE PLACE
About this place
Drinks poured at the counter range from highballs carrying the woody aroma of hinoki cypress to crisp fizzes combining matcha, shiso, and cardamom. Tucked into a calm corner of mAAch ecute Kanda Manseibashi, Low-Non-Bar Kanda Akihabara (Low-Non-Bar 神田秋葉原) offers an inviting space where anyone choosing to moderate their intake or skip alcohol entirely can still appreciate the focused craft and refined atmosphere of a dedicated cocktail bar.
Original Creations Layered with Aroma and Botanicals
The cocktail menu focuses primarily on imaginative low-alcohol and non-alcoholic builds. Herbal and botanical elements take center stage in recipes like the Wood & Grape Martini, which pairs tree aroma water and verjus with olive, and the EARTH & FIRE, mingling vetiver with myoga ginger, shiso shrub, and pickled chili pepper. Other layered creations include WABI - SABI, an intricate composition that blends sake with chocolate, wasabi, and orange.
Reinterpreted Classics and Bar Fare
The selection also features distinctive twists on familiar bar standards. Options such as the Not Dirty Martini, accented with hinoki and olive distillate, a Matcha Old Fashioned carrying the savory depth of first-pick green tea, and Yanagikage—a modern interpretation of an Edo-period mix of shochu and mirin—invite diners to linger over the culinary narratives behind each drink. Small plates like house-made fresh chocolate, olives with semi-dried tomatoes, and pork jerky serve as understated accompaniments to the glass in hand.
Conventional alcoholic drinks, including beer, wine, and hard liquor, are also served, allowing those who drink alcohol and those who do not to comfortably share the same counter. With doors opening from 14:00 on Saturdays and Sundays, the bar is equally practical for savoring a quiet, well-crafted drink during weekend afternoons.
